HOW CLEAN PLATE MEALS BEGAN

Chef CC began her personal Eco-cheffing career in Los Angeles over 8 years ago creating super fresh, nutritiously potent meals for her select private clients. As a personal whole foods chef though, she could only cook so much, for so many, each day. CC figured if she had a large commercial kitchen where she could prepare her meals in small batches, package, and deliver them, then she could share her cuisine with a wider clientele. This is how Clean Plate Meals began. Today, Clean Plate Meals is growing strong, producing what CC likes to call 'Conscious Cuisine' or 'Feel Good Food.' "I am amazingly grateful to know that what I love to do, actually makes people feel and look better. I am driven by the healing power of food," says CC.

Chef CC is leading a food movement stemmed from a fiery passion for fresh picked, local ingredients & the knowledge of the necessity of sustainable practices. She currently has a café/marketplace among other projects in the works.

WHO IS CHEF CC?

Eco Chef Chris Consalvo, known as Chef CC, grew up in Philadelphia, PA during an exciting time. Previously known for its' all american fare, the city was sprouting new culinary innovations blending cuisine from the surrounding ethnic neighborhoods with traditional ideas. CC's small but very eclectic, multi-cultural neighborhood just outside central Philadelphia was laden with organic food co-ops and community gardens. This is where her knowledge & respect of food, culture, and conscious eaters began.

At the age of fourteen, while caring for her ill mother, Chef CC began to prepare her meals. She strived to make the food look and taste good, while keeping in line with dietary restrictions. This was a turning point in CC's life. She began to realize the healing/nutritional value that whole foods held and became aware of how much more energy she and her mother had by avoiding processed or fast foods.

With years of restaurant experience including a stint at La Bec Fin & an apprenticeship with world reknowned italian chef Nunzio Patruno of the Monte Carlo Living Room, CC quickly learned the pressures of running a 4 star restaurants' kitchen. Timing, confidence, and technique were 3 key lessons she took with her into her culinary career.

During a visit to Los Angeles, CA in 1997, CC decided to make it her home to pursue her personal cheffing career. She had fallen in love with the quality produce of the local family owned farms, which had reminded her of her home town. Today in addition to her private clients, CC owns Clean Plate Meals a meal delivery service.
